4 cups of water
1 bag of small potatoes (with the skins on)
3 tablespoons of melted butter
3 cups of milk
1 red oinion chopped
3 tablespoons of all-purpose flour
salt and pepper to taste
1 cup of shredded cheese
1 tablespoon of liquid smoked seasoning
Cook potatoes for 10-15 min in boiling water- keep water
In a separate pot stir in butter, onion, flour, salt and pepper. Add potatoes and liquid, add milk- stir and use a hand blender to break the potatoes down. After desired consistency of potatoes have been achieved add cheddar and smoke flavour.
Keep at a fairly low temperature to ensure that soup does not burn on the bottom.
Garnish with carrots, dollop of sour cream, sprinkle of cheddar, green onion, or curry!
